Creamy Silken Tofu Udon

Creamy udon made using blended silken tofu as the sauce! This recipe is a delicious and healthier way to enjoy creamy noodles, with added protein!

Ingredients
  

  • 125  g minced turkey
  • 1  tbsp cooking oil
  • 2  tbsp spicy bean paste douban jiang 豆瓣酱
  • 1  tbsp light soy sauce
  • 1  tsp dark soy sauce
  • 150  g silken tofu
  • 240  g frozen udon noodles or instant udon
  • Freshly chopped scallions for garnish

Method
 

Cook the udon noodles
  1. Bring a pot of water to a boil.
  2. Add udon noodles and cook for 2 minutes until softened but still slightly chewy.
  3. Drain and set aside in a bowl.
Cook the turkey
  1. Heat 1 tbsp oil in a pan over medium heat.
  2. Add minced turkey and cook, breaking up any lumps, for 5 minutes until browned and mostly cooked through.
  3. Stir in spicy bean paste, light soy sauce and dark soy sauce.
  4. Cook for 3 more minutes, stirring frequently until turkey is fully cooked.
  5. Toss in freshly chopped scallions and cook for 1–2 minutes until fragrant.
Prepare the tofu sauce
  1. Blend silken tofu in a blender until smooth.
  2. Add the tofu to the cooked udon noodles.
Mix the udon, cooked minced turkey and silken tofu sauce together. Enjoy!
