Filet-O-Fish Onigiri

Filet-O-Fish inspired Japanese onigiri!

Ingredients
  

Sushi rice
  • 1 cup cooked sushi rice
  • 1/2 tbsp rice vinegar
  • 1/2 tbsp sugar
  • 1 tsp salt
Fried fish fillet
  • 1 white fish fillet
  • 1 egg
  • 1/4 cup plain flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/4 cup panko breadcrumbs
Other
  • 1 tbsp tartare sauce
  • 1/2 slice American cheese
  • 2 slices salmon sashimi optional
  • 1 tsp soy sauce
  • 1/2 sheet nori roasted seaweed

Equipment

  • 1 Rice cooker optional but recommended

Method
 

Make the fried fish fillet
  1. In a small bowl, crack one egg and whisk. Set aside.
  2. In a separate small bowl, mix together plain flour, salt, black pepper and paprika. Set aside.
  3. In a separate small bowl, add panko breadcrumbs.
  4. Pat the fish fillet dry, then dredge in the flour mixture, followed by dipping into the egg, then lastly coating in panko breadcrumbs.
  5. Fry the fish fillet in vegetable oil at 350F (175C) for ~3 minutes per side, or until golden brown on the outside and fully cooked inside.
Make the sushi rice
  1. In a bowl, add cooked sushi rice, rice vinegar, sugar and salt. Mix gently until combined.
Assemble the onigiri
  1. Wet your hands fully with water
  2. Grab half the sushi rice and roll it into a ball. Then flatten it onto the palm of your hand.
  3. Add in the fried fish fillet, half a slice of cheese, tartare sauce, followed by the salmon sashimi and soy sauce.
  4. Stack the remaining half of sushi rice on top, and use your hands to shape it into a ball shape. Use your fingers to pinch the edges to form a triangle.
  5. Wrap the onigiri with toasted nori and enjoy!
