Tofu Brulee

Inspired by chef Edward Lee's tofu brulee on Culinary Class Wars S1. Now you can recreate Netflix dishes at home!

Ingredients
  

Tofu brulee
  • 300 g extra firm tofu
  • orange peel alternative: mandarin peel
  • 300 g orange & passionfruit juice alternative: orange juice
  • 2 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tbsp white sugar
Garnish
  • Slices of nashi pear cut into disc shape
  • Slice of kiwi cut into moon shape
  • mandarin
  • 1 tbsp whipped cream substitute: Greek yoghurt

Method
 

  1. Slice the firm tofu into 3cm thick slabs, then use a round cookie cutter to cut out circles.
  2. In a pan, add the tofu, orange peel, orange and passionfruit juice, sugar and vanilla extract.
  3. Gently cook on medium heat, constantly spooning the orange sauce onto the tofu for 3mins.
  4. Place the tofu on a stainless steel surface, evenly spread 1 tbsp sugar on top and flame torch it until the sugar hardens.
  5. Place the tofu in a bowl and pour some of the orange sauce around it.
  6. Garnish with mandarin, kiwi, nashi pear and whipped cream.
