Veggie Instant Noodles

Quick and easy veggie instant noodles that are elevated with a fragrant homemade scallion oil, you'll love these!

Ingredients
  

Veggie soup
  • 2 tbsp vegetable stock powder
  • 1/4 tsp white pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
Scallion oil
  • 2 tbsp finely chopped scallions
  • 1/2 tsp cooking oil
Veggie packet
  • 1 tbsp diced carrots
  • 1 tbsp corn kernels
  • 2 shiitake mushrooms pre-soaked and thinly sliced
Noodles
  • 50 g Bihoon rice vermicelli noodles

Method
 

Make the scallion oil
  1. In a pan, add the scallions in oil and cook over low heat for 3 mins, or until fragrant. Set aside.
Mix the veggie soup seasoning powder
  1. In a small bowl, mix the seasoning powder ingredients and set aside.
Prepare the veggies
  1. Boil the carrots in water for 5 minutes, then boil the corn and shiitake mushrooms for 2 minutes. Drain and set aside.
Assemble the instant noodles
  1. In a large bowl, add the bihoon noodles, scallion oil, seasoning powder, and veggies. Pour over enough boiling water to cover. Cover and let it sit for 5 minutes, or until the noodles are softened.
  2. Mix and enjoy!
