Method
Prepare the Milky Ice
- Pour the Want Want Hot Kid Milk into a freezer-safe container with a lid.
- Freeze overnight, or until completely solid.
Make the Strawberry Jam
- Add the chopped strawberries, sugar, and lemon (or lime) juice to a saucepan.
- Cook over low heat for about 5 minutes, stirring occasionally, until slightly thickened. Small chunks of strawberry should remain.
- Remove from heat and allow to cool completely.
Prepare the Strawberry Garnish
- Place the chopped strawberries into a bowl.
- Add the sugar and gently massage with your hands. Set aside.
Shave the Milk Ice
- Using a fork, scrape the frozen Want Want milk into fine shavings.
- Tip: take the frozen milk out of the freezer for 10mins before scraping it so it’s easier to work with. Work quickly so the ice stays fluffy.
Assemble the Bingsu
- Add a generous layer of shaved milk ice to a serving bowl.
- Spoon over the strawberry jam, followed by the fresh strawberries.
- Finish with a dollop of whipped cream in the centre and top with a whole strawberry
