The easiest bingsu recipe ever!
If you’re craving for a delicious Korean bingsu, but you don’t have any shaved ice machine or blender – don’t worry, this recipe is for you!
All you need to have is Want Want hot kid milk, a freezer and some time to make this easy recipe!
No equipment required. But what is required is to freeze the milk overnight, or at least for a few hours until it is completely solid. So keep this in mind if you’re planning to make it!
How to achieve the MILKIEST shaved ice
The key to making the milkiest shaved ice is to use Want Want Hot Kid Milk. Why? Because this drink is creamy, milky and already sweetened. This means you can literally just freeze it and it’s ready to go.
Why it works
You know the Korean bingsu you order from a Korean cafe in Seoul? It tastes fluffy, light and milky. That’s because they’re not serving you frozen ice shavings, instead, they shave milk (that’s likely mixed with condensed milk or another sweetener).
To achieve a very similar result to Korean cafe style bingsu, simply use Want Want milk! This drink is such a childhood favourite of mine so I hope you can give it a go!
Substitute
If you can’t get Want Want Hot Kid Milk, I’d suggest you substitute it with full cream milk (or plant based milk of your choice). Then add in condensed milk and mix thoroughly. How much condensed milk you add depends on your own preference!
Strawberries
I’m a really big fan of strawberry bingsu! I would always order the strawberry cheesecake bingsu from Sulbing, a Korean bingsu cafe in South Korea.
Strawberries are juicy and tart – making them perfect contrast with the milky sweet shaved ice.
I chopped the strawberries in two ways. Smaller pieces for the strawberry jam, and medium sized chunks for the garnish. It’s all up to you!
Other fruit options
You can use any other fruits you like with this shaved ice! I’d highly recommend mangoes, peaches and even melons!
Strawberry jam
Making homemade strawberry jam is actually SO simple! It tastes so fresh and you can control the sugar level too.
To make strawberry jam, simply add chopped strawberries to a pot or pan. Then add sugar and a small splash of lime/lemon juice. Slowly simmer this on low heat for about five minutes or until it has thickened.
I’d recommend gently crushing the strawberries with your spatula or fork so they release juices. But don’t overdo it so you can still get chunks of strawberries in your jam.
Tips for scraping the frozen milk
This recipe is so simple because all you need is a fork to make shaved ice!
But there are still a few tips I’d recommend:
- Defrost the frozen milk: before scraping the frozen milk, I’d recommend taking it out of the freezer for about 10mins. This makes it easier to scrape.
- Work fast: Once you start scraping the frozen milk, work as fast as you can! It’s definitely an arm workout and it will take some time (it took me around 5mins of non-stop scraping). Work fast to prevent the shaved ice from melting!
