if kimchi jjigae was in fries form..
The inspiration behind this creation is actually my favourite Korean stew, aka the Kimchi stew (kimchi jjigae).
It’s full of kimchi and spicy flavours, and usually I like to add spam and tofu in the stew too!
That’s when I had the aha! moment. I could make crispy spam fries, with dipping sauces like kimchi jam and tofu sauce!
The spam fries
These spam fries are so easy to make!
I made these in the air fryer and for the batter, I used potato chips.
Yep, not a special batter or cornflakes or panko breadcrumbs. I just used a packet of potato chips. It worked really well!
For the batter, I used corn starch, egg and potato chips that have been crumbled.
If you’d like more batter, I suggest dipping the spam into the egg and potato chips twice (see recipe below).
the kimchi jam
This is my favourite part of this recipe – the kimchi jam!
It’s a mixture of kimchi chopped into little bits, then added with gochujang, gochugaru, canned tomatoes and some other seasonings.
It’s spicy, acidic, sweet and full of umami flavour!

I used a kraft fries box and some sauce tubs for the kimchi jam and tofu sauce.
I decorated the fries box with kimchi drawings!
The jjigae part is highlighted blue because I tried to replicate the spam logo haha. Did you notice?

Kimchi Jjigae Fries
Method
- Cut the spam into thick cut rectangular pieces
- Open the bag of potato chips, hold down the bag opening and smash the chips until they’re broken into smaller pieces (note: easier if you let the air out). Pour the chips into a bowl.
- In a separate bowl, whisk the egg.
- In a separate bowl, add the corn starch.
- Coat the spam pieces in corn starch, the egg, then dip into the potato chips.
- If you’d like more coating, dip the spam back into the egg then into the potato chips again.
- Air fry the spam fries at 180C for 10-12mins, or until golden brown.
- In the meantime, heat up a pan on medium heat, add cooking oil. Add in chopped kimchi and stir fry for 2mins
- Add in the canned tomatoes and all the seasoning.
- Stir fry for about 4-5 mins, until it becomes a jam consistency.
- Serve it in a small dipping bowl.
- In a blender or food processor, blend the silken tofu until completely smooth.
- The texture should resemble mayonnaise.
- Serve it in a small dipping bowl.
